Often when a writer sets out to write a story or to cover an event the story is already written, but sometimes the story takes a turn very different from its original. That too is true of this story.
We sat down recently with proprietors Natalie and Kevin Jensen of So Cupcake interested in knowing more about the rise in popularity of the cupcake. What we left with was a story too powerful to not relay the rest of the story.
The origins of So Cupcake began a few years ago when their daughter Celina who has cerebral palsy was selected to receive her Make-a-Wish dream. Being lovers of the cooking channel and of sweets in general, Celina and Natalie were off to New York where Celina met her idol Emeril Lagasse. Almost as if pre-destined, a spark of creativity and love was set in motion and came together writing the story that is So Cupcake.
After coming home Celina’s desire to cook, and her parents’ devotion bore an effort by Natalie and Celina where they dabbled in cake recipes, making various frostings and experimenting to get it just SO.
The resulting original recipe cupcakes were an instant hit at fundraisers, birthday parties, showers and events of friends and family. Almost as if continuing to write its own story Natalies husband soon spotted a location for their bakery on Highland Drive. Once Natalie walked into what is now the bakery, she instantly saw her vision of a specialty bakery.
So Cupcake is delightfully decorated in a whimsy French inspired décor, with a small seating area in the lobby should you choose to dine in. So Cupcake provides personal service from a staff that takes pride in what they’ve accomplished. Every crumb of So Cupcake highlights the creativity and the love behind this special bakery.
On any day you can find a variety of specialty cupcakes and minis (small one-to-three bite miniature cupcakes), or pre-order any of their 40 specialty flavors, in full size or mini, each cupcake with a unique name. Order some for your next event or simply drop in and enjoy a few minis to go.
